Hello!

My name is Kacie Blackman and welcome to veggiebytekitchen.com. My husband, Randall and I have been together since 2006 and married since 2013. Since dating him, he has had a huge impact on the way I see food. I grew up eating all types of meats and animal products. It wasn’t until I met him that I really got to experience a vegan lifestyle.  Randall has been a vegan since age 2 (28 years) and I have been since 2010 (7 years). On January 1, 2010, I started not eating meat with the Daniel fast. While on this fast, I focused on connecting deeper with God spiritually, mentally, physically, and emotionally. When the fast was done, the Lent season was beginning, so I decided to continue eating vegan until it was over (Easter). On Easter, when I attempted to eat meat, I could not stomach it and my taste buds didn’t find it appetizing. From that day on, I was Vegan. It challenged me at first but in the end I learned so much. That is why My husband and I started this to help Individuals transition to a plant based diet. We love to cook and eat delicious/nutritious food!

Most times our friends and family would be introduced to vegan food at our home. We love to see the faces of family and friends light up with a smile as they indulge in our home cooked meals (especially those that were hesitant since the meals are meatless). After numerous dinners or gatherings, friends and family would ask more questions about being vegan. Finally we decided to make a resource on the experiences our family has had over the years. Veggie Byte is your resource for easy and tasty meals. We enjoy combining different cuisines, so each meal tastes great!

Additionally, we are here to assist you in transitioning to a plant based diet or somewhere in between. We want you to get excited about preparing and enjoying healthy and pleasurable meals! If you would like to see something or there is anyway we can add value for you, let us know.
