Vegan 40 minutes

If you are busy and on the run, this one pot dish is for you. Spice up your rice and excite your taste buds. Take an ordinary brown rice, color, coconut milk and spices and create a fiesta. We really enjoyed making this dish as it packs a lot of different nutrients and flavor. The kidney beans have 15 grams of protein per cup. It is a complete meal as it contains numerous vitamins within the peppers and brown rice. You can pair this with tofu, tempeh, or seitan stew. It also taste better the next day as a leftover meal.

Kidney Bean and Pepper Fiesta Rice


  • 2 tbs of cilantro
  • 1/4 cup red pepper
  • 1/4 cup yellow pepper
  • 1/4 cup green pepper
  • 1/2 can coconut milk
  • 2 cans kidney beans
  • 4 cups of brown rice
  • 4 tbs avocado oil
  • sea-salt to taste
  • Black pepper or Cayene to taste
  • Fresh sprig of thyme


  1. Turn Oven to 350 degrees
  2. Dice peppers
  3. Chop cilantro and thyme finely
  4. Add 4 tbs avocado oil to medium size skillet on medium heat
  5. Add the peppers, cilantro, Thyme and kidneys and stir until combined
  6. Season with Salt and pepper
  7. Add half a can of coconut milk
  8. Add 4 cups of Rice and allow to simmer 3 mins
  9. Pour boiling water until the mixture is almost covered by the water
  10. Baking:
  11. Transfer mixture to oven ready dish
  12. Place in oven in covered dish
  13. Let it bake for 40 minutes on 350 degrees until rice is tender or cooked.
