Vegan Green Curry Stir Fry

Whoever thought Curry could taste just as good Vegan! Green Curry Stir Fry is traditionally made with meat like chicken, but it can be easily substituted. This staple Thai dish is easily transformed into a Vegan classic that everyone can enjoy.

Also, just like any curry you can decide how spicy you want your food to be. So don’t be afraid to venture into something new, and this is the perfect intro vegan dish to sample some awesome Thai flavors.

 

Vegan Green Curry Stir Fry

Ingredients

  • ¼ cup Avocado oil
  • ¼ head of cabbage
  • 10 Shitake mushrooms, sliced (any kind works)
  • 1 bunch of Chinese Broccoli (any broccoli or greens will work)
  • 1 tsp Sea Salt
  • 1 Block of baked tofu
  • 2 tbsp Vegetarian Mushroom Oyster Sauce
  • 2 tsp Thai Green Curry Paste
  • *Soy Sauce add to taste
  • 1 tsp ground ginger

Instructions

  1. In a large skillet or wok, heat 2 tablespoons of oil
  2. Sauté mushrooms on high heat for 5 minutes until tender
  3. Add Sea Salt
  4. Add baked tofu and cook until brown (crispy)
  5. Add a little oil (so tofu doesn’t stick)
  6. Add Chinese Broccoli and Cabbage
  7. Add Vegetarian Mushroom Oyster Sauce
  8. Thai Green Curry Paste
  9. Add ginger
